I'm clinging on to the last bit of warmth in Australia with this fresh, bright and herby salad!
The sweetness of the strawberries works beautifully with the crisp cucumber, fragrant mint and saltiness of the feta.
It's beautiful as a side or can be teamed with protein, some extra leafy greens and some whole grains to take this from side to a perfectly balanced and nutritious meal.
INGREDIENTS
1x punnet of strawberries
1x handful of fresh mint, finely chopped
1x telegraph cucumber, seeds removed and chopped into cubes
1x generous handful of sprouts (I used watercress)
1/8 of a red onion, very very finely diced
1/4 cup of pine nuts, toasted
Feta (optional)
Balsamic vinegar (to serve)
METHOD
It’s as simple as assembling all your ingredients in a bowl and tossing them together. Top with feta if you wish and drizzle with a splash of good quality balsamic vinegar (not of that balsamic syrup rubbish!)
