I had the ultimate lazy Sunday today which featured getting my bake on. As you can see, the outcome was pretty delicious. I thought it was only fair that I shared the recipe for anyone who fancies whipping these choc chip cookies/biscuits up at home.
Ingredients
1/2 cup cashew or almond butter
1/3 cup extra virgin olive oil
4 tbsp maple syrup
2 tbsp coconut sugar (or brown sugar)
1 egg
1 and 3/4 cups of blanched almond meal
1/2 tsp baking powder
2 tsp vanilla extract
1 bar of 85% Lindt chocolate
Pinch of salt
Method
1. Preheat the oven to 180.
2. Add the nut butter, maple syrup, sugar, olive oil and egg to a food processor and mix till combined. You could do this by hand, you’ll just need some serious elbow grease.
3. Remove the batter from the processor and add to a bowl with the almond meal and baking powder.
4. Chop the chocolate into small cubes and then add it to the dough until evenly mixed through.
5. Roll the mixture into balls and then squish into cookie shapes onto a lined baking tray. Add a sprinkle of salt onto each cookie and then pop into the oven until golden and delicious.
